Lemonade Scones

I was looking for recipes for different lemonades and then I stumbled upon this recipe for lemonade scones from Australian Women’s Weekly and I just had to try them. They are very tasty and fresh, not too much like other scone recipes that I’ve tried through the years. So I made me some high tea here at home on an ordinary Thursday.

Ingredients

  • 230 ml lemonade
  • 230 ml cream
  • 700 ml self-raising flour
  • 1 pinch of salt
  • Flour for dusting
  • Serve with cream and marmalade

Directions

Preheat the oven to 200C.

Mix all the ingredients lightly in a bowl. Place the bowl on a flour dusted table and knead it lightly. The dough must not become dry and you must not knead too much flour into the dough.

Shape the dough into a rectangle about 3 cm high. Cut out scones with a 5 cm scone cutter or just with a little glass. Place them on a flour dusted baking tray with baking paper. Brush them with milk. Bake them for 15-20 minutes, or until they are golden on top.

Let them cool on a rack. I sprinkled some icing sugar over them and served them with raspberry marmalade and softly whipped cream.
