Dream Cake VII

When I was a child I didn’t like the coconut butter filling on top of the cake so my mom baked it with rolled oats instead. This recipe makes a deliciously spongy cake.

Ingredients

  • 3 egg
  • 250 g sugar
  • 50 g melted butter or 1 tbsp oil
  • 250 g flour
  • 3 tsp baking powder
  • 1 tsp vanilla extract
  • 200 ml water

Coconut Butter Filling

  • 125 g butter
  • 50 ml water
  • 100 g shredded coconut (or rolled oats)
  • 250 g brown sugar
  • 1 tbsp syrup

Directions

Preheat the oven to 200C.

Beat the sugar and eggs to a light and fluffy mixture. Add butter/oil and vanilla extract and stir well. Sift in flour and baking powder alternating water.

Pour the batter into a greased or baking paper lined baking tin (ab. 22×30 cm) and bake it for 20-25 minutes. The cake is done when a wooden skewer comes out of the middle of the cake clean.

While the cake is baking melt the coconut butter filling in a saucepan at low-medium heat. When the cake is done, pour the coconut butter filling over the cake and place it back in the oven for ab. 5 minutes. If the cake is not fully baked to begin with, it will collapse when the filling is poured over it.

Let the cake cool and serve it warm.
