Banana Bread piece

This is the best and most spongy banana bread I have ever tasted! The recipe is from the Danish cook Nikolaj Kirk’s cookbook Everyday Food.

If you can’t find ripe bananas in your supermarket do not despair. Turn the oven onto grill and place the bananas with the peel on in the oven for a few minutes. Suddenly you have ripe bananas

I like chocolate in my banana bread so I have added some to the recipe.

Serves 10

Ingredients

  • 6 eggs
  • 350 g sugar
  • 1 vanilla pod, the corns (or 1-1 1/2 vanilla extract)
  • 200 g melted butter, warm
  • 250 g flour
  • 15 g baking powder
  • 6 ripe bananas
  • 50 g dark chocolate, chopped

Directions

Preheat the oven to 180C.

Beat eggs, sugar and vanilla light and fluffy. Pour the melted butter slowly into the egg mixture while stiring. Sift flour and baking powder into the mixture, little by little.

Mash the bananas and fold them and the chocolate pieces into the batter. Pour the batter into a greased or baking paper lined loaf pan and bake it for ab. 45 minutes on the bottom rack of your oven. To be ready the cake must be firm and a wooden skewer must come out without raw batter on it.

NB: In my oven it takes about 1 hour and 15 minutes to bake the cake because I’m using a loaf pan, but again, check your cake with a wooden skewer to see if your cake is finished after the 45 minutes.
