Apple cake old fashioned

Here is a recipe that I don’t really know whether you can even call a recipe as there are no real measurements in it. It isn’t easy to make a precise recipe for Danish apple cake. It depends on how sour or sweet the apples you use are. But as a rule all apples can be used, also cooking apples This is a real classic in Denmark.

I filled my 2,5 L pot with apple pieces, just to give you an idea of the amount of apples you are going to need.

You can also eat the apple cake with macaroons instead of breadcrumbs, but remember then not to make the mashed apples too sweet.

Serves 4-6


  • 10-15 apples, roughly depending on size
  • Sugar, plenty
  • 2-3 tsp vanilla sugar


  • 100 g breadcrumbs
  • 10 g sugar


  • Whipped cream


Peel the apples and remove the cores. Cut the apples into small pieces and put them in a pot. Cover the bottom of the pot with a small layer of water so the apples won’t burn. Place the pot on the stove and bring the water and the apples to a boil.

Let it simmer at low-medium heat until all the apple pieces have turned into mash. Add the sugar. You are going to need more than you think. Season with sugar until the mashed apples have become sweet. Remove the pot from the stove. Add vanilla sugar and let the mash cool off.

Pour breadcrumbs and sugar onto a pan and place it over medium-high heat. Stir the breadcrumbs with a spatula. It will suddenly start taking colour so be sure to stir constantly. Turn down the heat a little as soon as the breadcrumbs start taking colour. Roast the breadcrumbs until golden.

Remove from the heat and pour it into a wide bowl. Stir it once in a while, otherwise it becomes one big lump.

Serve the mashed apples, breadcrumbs and whipped cream either as plated meals or mashed apples and breadcrumbs layered in one large glass bowl with whipped cream on top.
