Peanut Cookies

These peanut cookies are crispy while at the same time soft for those people who just love peanutbutter. I would probably prefer to make an indentation in the middle and fill it with jam, e.g. raspberry, next time, so you’d get a real peanut butter and jelly cookie. A super easy and fast cookie to bake.

around 45 cookies


  • 250 g flour
  • 125 g sugar
  • A pinch of salt
  • 150 g chunky peanut butter
  • 2 egg yolks
  • 150 g butter, room temperature


Preheat the oven to 180C.

Mix the flour, sugar and salt. Add peanut butter, egg yolks and butter and gather the dough.

Roll out small balls, about 1" in size, and place them on a baking tray with baking paper. Press each ball flat with a fork.

Bake the cookies for 12-14 minutes. Let them cool a little on the tray before moving them to a rack. Let them cool completely and store them in a cookie jar. They can be kept for around 1 week.
