Sugar free Blueberry Banana Muffin

I threw myself into something I never thought I’d do! Sugar free muffins! My daughter is nearly one and a half years old and I don’t think it’s necessary to fill her with sugar. But on the other side, it shouldn’t all be carrots and rye bread. Especially when she sees the rest of us eating cakes. Then it’s better to be able to give her something that looks like a cake.

I have always said that cakes without sugar aren’t really cake, and I don’t know whether I’d categorise these muffins as cake. A muffin isn’t necessarily cake. This blueberry and banana muffin is sweet in a gentle way and not sugar-sweet. It has a lovely flavour and is an obvious choice if you want a healthier snack for the late work hours or for the kids while dinner is cooking.

The one tablespoon of corn starch is there to give a lightness to the muffins. In, among others, the US and Great Britain, they have something called cake flour. You can easily make it yourself by combining flour and corn starch well, preferably through a sieve. You can also leave out the corn starch and replace it with white wheat flour.

Makes 12 muffins

Ingredients

  • 100 g white wheat flour
  • 1 tablespoon corn starch
  • 1/2 tbsp baking powder
  • 1/4 tsp baking soda
  • 1 1/2 tsp vanilla powder
  • 1/2 tsp cinnamon
  • 100 g blueberries
  • 1 egg
  • 100 ml Greek yogurt
  • 2 ripe bananas, mashed

Directions

Preheat the oven to 175C and grease a muffin tin (or use papir cups, but be aware that the muffins will stick to the paper).

Sift flour, corn starch, baking powder, baking soda, vanilla powder and cinnamon together. Make sure it is fully combined. Fold in the blueberries. In a separate bowl, beat the egg with a fork. Stir in the Greek yogurt and mashed bananas. Add the dry ingredients with blueberries all at once and stir till just combined. Don’t overstir it as you’ll lose some of the lightness in the batter.

Divide the batter between the 12 muffin cups in the tin. Bake the muffins for about 25-30 minutes.
