Cookies with Dulce de Leche

Cookie dulce de leche

These cookies have deliciously crisp outside and a soft caramel middle. The recipe comes from Cupcake Jemma. She makes so many delicious things! I have only changed her caramels for some dulce de leche. I had an open can in the fridge which needed to be used.

18 cookies


  • 350 g flour
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 230 g butter, room temperature
  • 100 g sugar
  • 155 g brown sugar
  • 45 g cane sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 18 tsp dulce de leche (or another thick caramel)


Preheat the oven to 170C forced fan.

In a small bowl mix together flour, salt and baking soda.

Stir the softened butter and the three kinds of sugar together. In a small bowl beat the egg and vanilla lightly. Stir it into the butter-sugar mixture until it is combined. Lastly, add the flour mixture and stir again until fully combined.

Weigh the cookies so they get the same size: take 2×25 g for each cookie. Roll them into balls and press them flat. Apply a teaspoon of dulce de leche to one of the two cookie bases and place the other on top and press the sides of the top and bottom cookies together. Place the cookies on baking paper spaced quite far apart as they’ll spread quite a lot.

Bake the cookies for 10-12 minutes. Let them cool on the baking trays.

Store the cookies in a cookie tin.
