Bunny pancake

A delicious pancake with a light taste of lemon and vanilla.

The batter is made like a regular pancake batter, but just for fun I tried out some “pancake art”. It’s a hit, especially with the kids. Now I think I’m just going to have to except that my daughter is not the greatest pancake fan. On the other hand, she is a big fruit lover so it wasn’t all bad

Makes about 12 bunny pancakes


  • 130 g white wheat flour
  • 60 g demerara sugar (I usually blend mine a little before using)
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 150 ml sour cream
  • 80 ml milk
  • Zest of 1 lemon (organic)
  • 50 ml lemon juice
  • 3 tbsp butter, melted
  • 1 egg
  • 1 1/2 tsp vanilla extract


  • Strawberries
  • Blueberries
  • Banana
  • maple syrup (optional)


Mix flour, sugar, baking powder, baking soda and salt. In another bowl mix sour cream, milk, lemon zest, lemon juice, melted butter, egg and vanilla extract. Pour the wet ingredients into the dry and mix is together quickly until just combined.

Heat up a skillet to medium heat (it must not be too hot). Place two tablespoons of batter on the skillet to form a circle. Then take 1/4 tbsp additional batter and lay it on the skillet in the form of an ear, repeat with the other ear. Let the pancake cook for a couple of minutes until it is golden, flip it and cook until golden.

Decorate with fresh fruit and serve, optionally with maple syrup.
