Class Hour Cake

This is a real classic from Arla but I make a cream cheese frosting instead of the butter frosting they suggest.

I’ve always thought that this cake is better the day after it’s been baked, but it can be hard to leave it be

Preheat the oven to 175C. Grease a 25×30cm baking tin or coat it with baking paper (I chose to grease mine to get nice sides on my cake).

Mix butter and sugar together. Add 1 egg at the time and stir well after each one. Add vanilla extract. Mix flour, baking powder and cacao in another bowl. Stir it into the butter/egg mixture alternating milk, starting with the flour mixture to make it easier to stir out butter lumps.

Pour the batter into the baking tin and bake the cake for about 1 hour on the bottom shelf. Cool the cake completely on a grid.

Cream cheese frosting: Place the butter in a bowl together with icing sugar and vanilla extract. Stir it together as well as you can. Add the cream cheese little by little and stir well to avoid butter lumps.

Half the cake lengthwise and apply a layer of cream cheese frosting. Place the top over the frosting. Spread the remaining frosting over the top of the cake.
