Cookies Choc Nut Chris Kiss

A recipe from Arla which we used when I was a child at Christmas time. Last year I tried them again. They are good, but unfortunately they go quite soft after a few days in the biscuit tin.

Around 100 biscuits. I usually make due with half.

  • 175 g butter
  • 250 g plain flour
  • 75 g icing sugar
  • 2 egg yolks
  • 3 egg whites
  • 125 g sugar
  • 150 g shredded coconut

Preheat the oven to 200C. Cover a baking tray with baking paper.

Crumbled the butter into the flour and mix it together with icing sugar and egg yolks. Cool the dough in the fridge. Roll the dough out thinly and cut out biscuits with e.g. a glass (around 4 cm) and place them on the baking tray.

Meringue mass: Whisk the egg whites stiff. Add half of the sugar and whisk heavily for a moment. Carefully fold in the rest of the sugar and the shredded coconut. The meringue mass is placed on each biscuit with two teaspoons. Bake the biscuits in the top of the oven.
