Coconut Macaroon

We were walking through the cake isle in the supermarket today and stopped some coconut macaroons. My fiancĂ©’s comment was “But can’t you also make those?” Sure thing The Recipe is from Arla. They are so easy to make that it almost hurts. Stir, bake and voila, you have crisp coconut macaroons.

Around 30 macaroons


  • 50 g butter
  • 250 g desiccated coconut
  • 250 g sugar
  • 1 vanilla pod, split and seeds scraped
  • 4 egg whites


  • Around 125 g dark chocolate


Preheat the oven to 200C.

Place butter and the remaining ingredients in a sauce pan and melt it together. Stir well at low heat for about 4 minutes.

Place coconut tops on baking paper with two teaspoons. The recipe says that it makes 50 macaroons, but I made 30 as I think they should have a certain size.

Bake the coconut macaroons in the middle of the oven for around 12 minutes.

Slide the baking paper and macaroons on to a rack. Melt chocolate over a water bath and dip the base of the macaroons in the chocolate. Place the macaroons back on the baking paper and let the chocolate dry.
